In vineyards | The 24 hectares of beautiful vineyards of Castello Bonomi extend into a small precious paradise located in the south of Franciacorta. Harvest takes place from 15th August to 20th August with meticulous selection of the bunches before pressing. |
---|---|
In cellar | After the soft pressing to extract only the best must, vinification takes place with cold maceration to enhance the perfumes and the bouquet of wine, with fermentation at temperatures of about 14°C. The base wine, after the first fermentation in steel, matures for about 6 months at controlled temperature. After a minimum of 24 months the sparkling wine is disgorged. It follows a refinement in the bottle before the Rosé is released into the market. |
